Ingredients

  • lard or oil

  • 4-6 chicken thighs (could be substituted for entire chicken parts for bigger meals)

  • hot, smoked and sweet paprika powder

  • 2-3 large onions

  • water or chicken stock if available

  • Hungarian yellow wax peppers (or yellow or green bell peppers, they are a bit more sweet)

  • 4-6 tomatoes ingredient 1

  • 3-4 cloves of garlic

Preparation

Step 1

Optional step: Braise the chicken in a pan pot until the skin is crispy and brown to add some extra flavour to the dish.

Step 2

Dice and brown the onions in fat (5-10 minutes),then chop the tomatoes and peppers and add it to the mix alongside with the paprika - season it to flavour/preference, but a teaspoon of each paprika type is generally a good rule of thumb.

Step 3

Stir the vegetables for 5-8 minutes, add back the chicken, then fill the pan with water or stock to to cover the meat.

Step 4

Simmer it for 30-45 minutes until the chicken is cooked through and soft. Add garlic, pepper, cumin or any additional spices to your preference.

Step 5

Once the stew is ready, remove the chicken, mix some sour cream with flour and temper it with the stew and slowly mix it together to thicken the stew. Bring it to a boil and it’s ready to serve.

Dumplings - you can read our Hungarian Flour Dumpling recipe with more details, but here's the cheat sheet:

  1. Mix the flour, eggs and some water until a light masse is created

  2. Bring a bit of salt water to boil

  3. Pour the dough on a chopping board and using a small spoon cut tiny biteable pieces into the boiling water.

  4. Cook the dumplings for 5-8 minutes

  1. The stew can be made with stew, mushrooms as well which is quite nice

  2. Enjoy!
